High-Protein Tofu Toast (No-Bread Vegan Breakfast)

Okay, hear me out before you laugh at me from behind your sourdough.

I know “tofu toast” sounds like something a vegan made up to feel better about not eating bread. But this has genuinely become my new breakfast obsession, and I need you to try it before you judge it.

The whole idea: crispy seasoned tofu becomes the toast. No bread. The tofu gets firm and golden in the air fryer until it’s sturdy enough to hold all your toppings, just like a slice of bread would. Then you pile on avocado, tomatoes, everything bagel seasoning — all the good avocado-toast stuff — except now your breakfast is packed with protein instead of carbs.

Why Tofu Instead of Bread?

Here’s my actual reasoning, not just “carbs bad.”

I love starting my day with a higher-protein meal. Carb-heavy breakfasts spike your energy and then drop you off a cliff around 10am — you know the crash. Protein keeps things steady.

But I’m not always in the mood for a sweet smoothie. And a tofu scramble? Love it, but the pan, the cleanup, the effort — not every morning.

This is the perfect in-between. Simple, savory, whole-food ingredients, barely any dishes, and no real “cooking” — just slicing and seasoning. A block of extra firm tofu has around 18-20 grams of protein, so this little no-bread toast situation actually fuels your morning.

Tips for the Best Tofu Toast

  • Press the tofu well. The drier the tofu, the crispier the “toast.” Wet tofu steams instead of crisps.
  • No air fryer? Bake the tofu slices at 400°F for 20-25 minutes, flipping halfway through.
  • Slice evenly. Same-thickness slices = even cooking and a sturdier base.

High-Protein Tofu Toast

Crispy air fryer tofu replaces bread in this savory, high-protein vegan breakfast topped with avocado, sugar bomb tomatoes, red onion, and everything bagel seasoning.

Ingredients
  

For the Toast

  • 1 package extra firm tofu pressed and drained
  • 2 tbsp soy sauce or coconut aminos
  • 1 tsp Trader Joe's Green Goddess seasoning
  • ½ tsp garlic powder
  • Salt and pepper to taste

For the Top

  • 1 avocado sliced
  • Sugar bomb tomatoes halved
  • 1 tbsp fresh lime juice
  • ¼ red onion thinly sliced
  • Everything bagel seasoning to taste
  • Fresh dill to taste

Instructions
 

  • Press and drain the tofu to remove excess liquid. Slice into rectangles about the same size and thickness as a slice of bread.
  • Toss the tofu slices with soy sauce and seasonings. Air fry at 400°F for 5 minutes, then flip and air fry another 5 minutes, until firm and crisp enough to act as the base of the dish.
  • While the tofu cooks, prep your toppings. To fan the avocado, slice it in half, then while still in the skin, slice thin strips from top to bottom and scoop out with a spoon. Gently fan the slices. Or simply smash the avocado onto the tofu.
  • Build each tofu toast: layer on the avocado, tomatoes, and red onion.
  • Finish with fresh lime juice, a sprinkle of everything bagel seasoning, and fresh dill. Serve immediately.
