High-Protein Tofu Toast
Crispy air fryer tofu replaces bread in this savory, high-protein vegan breakfast topped with avocado, sugar bomb tomatoes, red onion, and everything bagel seasoning.

For the Toast
- 1 package extra firm tofu pressed and drained
- 2 tbsp soy sauce or coconut aminos
- 1 tsp Trader Joe's Green Goddess seasoning
- ½ tsp garlic powder
- Salt and pepper to taste
For the Top
- 1 avocado sliced
- Sugar bomb tomatoes halved
- 1 tbsp fresh lime juice
- ¼ red onion thinly sliced
- Everything bagel seasoning to taste
- Fresh dill to taste
Press and drain the tofu to remove excess liquid. Slice into rectangles about the same size and thickness as a slice of bread.
Toss the tofu slices with soy sauce and seasonings. Air fry at 400°F for 5 minutes, then flip and air fry another 5 minutes, until firm and crisp enough to act as the base of the dish.
While the tofu cooks, prep your toppings. To fan the avocado, slice it in half, then while still in the skin, slice thin strips from top to bottom and scoop out with a spoon. Gently fan the slices. Or simply smash the avocado onto the tofu.
Build each tofu toast: layer on the avocado, tomatoes, and red onion.
Finish with fresh lime juice, a sprinkle of everything bagel seasoning, and fresh dill. Serve immediately.
- Press the tofu well — the drier the tofu, the crispier it gets.
- No air fryer? Bake at 400°F for 20-25 minutes, flipping halfway.
