Soyaki Tofu Fried Rice with Sesame Broccoli

This soyaki tofu fried rice is one of my favorite easy vegan weeknight dinners. Trader Joe’s frozen vegetable fried rice is the shortcut that makes it totally manageable, even if you don’t consider yourself a confident cook. Add crispy marinated tofu, sesame broccoli, sriracha, and fresh toppings, and you have a savory, satisfying dinner in about 30 minutes.

What You’ll Need

For the Soyaki Tofu

  • 1 block extra-firm tofu, pressed and cubed
  • 3 tablespoons teriyaki sauce, such as Trader Joe’s Soyaki
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil

For the Sesame Broccoli

  • 2 cups broccoli florets
  • 1 tablespoon sesame seeds
  • 1 teaspoon red chili flakes
  • 1 teaspoon garlic salt
  • 1 tablespoon olive oil

For the Fried Rice

  • 1 bag Trader Joe’s frozen vegetable fried rice
  • Green onions, for topping
  • Everything bagel seasoning, for topping
  • Sriracha, to taste

How to Make Soyaki Tofu Fried Rice

  1. Cut the tofu into cubes and marinate it in the teriyaki sauce and soy sauce. Set it aside while you prepare the broccoli.
  2. Cut the broccoli into evenly sized florets and lightly steam it. Add it to a frying pan with the sesame seeds, red chili flakes, and garlic salt. Cook over medium heat until the sesame seeds become fragrant.
  3. Heat the olive oil in a frying pan over medium heat. Cook the tofu until all sides are crispy. Reduce the heat to low, pour the remaining marinade over the tofu, and toss to coat.
  4. Cook the frozen vegetable fried rice according to the package instructions, usually about 5 minutes in a frying pan over medium heat.
  5. Divide the fried rice between two bowls. Top with the soyaki tofu and sesame broccoli, then finish with green onions, everything bagel seasoning, and sriracha. Enjoy!

  • Cook frozen fried rice according to package instructions, about 5 minutes in a frying pan over medium heat.
  • Plate the fried rice, top with soyaki tofu and sesame broccoli. Finish with green onions, everything bagel seasoning, and sriracha. Enjoy!

Notes

Want to make this even better? Add JUST Egg or tofu scramble to the rice for a vegan egg fried rice effect. Any brand of frozen vegetable fried rice works if you don't have Trader Joe's nearby.
