Move over smoothie bowls. It’s oatmeal’s time to shine.
This loaded oatmeal bowl is one of my favorite ways to start the day. It’s warm, filling, packed with fiber, protein, healthy fats, and antioxidants, and it takes about 5 minutes to make. The base is simple: oats cooked with mashed banana, cinnamon, maple syrup, and a splash of vanilla. But the toppings are where the magic happens.
I went all out with sliced strawberries, bananas, a drizzle of peanut butter, hemp seeds, chia seeds, and a trail mix loaded with candied cashews, pumpkin seeds, coconut pieces, chocolate chunks, peanuts, and almonds. Every bite is a different combination of textures and flavors: creamy oats, crunchy nuts, sweet fruit, and that warm cinnamon running through everything.
This is the kind of breakfast that keeps me full for hours without feeling heavy. It’s also incredibly flexible. Use whatever fruit is in season, whatever nut butter you have, and whatever toppings are in your pantry. There’s no wrong way to build an oatmeal bowl.
One thing I love about this recipe: carbs are not the enemy. Our brains literally run on glucose, and we need healthy carbohydrates to perform at our best. So if you’re tracking your macros, don’t make protein your only focus. A bowl like this gives you the fuel your body actually needs.
What You’ll Need
For the oatmeal base:
- 2 packets oatmeal (I use Better Oats Bare with oats, barley, wheat, quinoa, and rye)
- 1/2 banana, mashed
- Cinnamon to taste
- Maple syrup to taste
- Splash of vanilla (optional)
- Water or plant-based milk
Toppings:
- Strawberries, sliced
- Banana, sliced
- Peanut butter
- Hemp seeds
- Chia seeds
- Trail mix (candied cashews, pumpkin seeds, coconut pieces, chocolate chunks, peanuts, almonds)
How to Make It
- Cook the oatmeal according to package instructions. I use the microwave with water, but you can use plant-based milk for a creamier result.
- While the oats are still hot, stir in the mashed banana, cinnamon, maple syrup, and vanilla. The banana melts into the oats and adds natural sweetness and creaminess.
- Pour into a bowl and add your toppings. Go big. Layer the fruit, drizzle the peanut butter, scatter the seeds and trail mix. Make it look like something you’d want to photograph.
- Eat it warm. That’s it.
Tips
- Mashing the banana into the hot oats is the move. It makes the base creamy and naturally sweet so you need less maple syrup.
- A little cinnamon goes a long way and it pairs perfectly with the peanut butter and banana.
- If you meal prep, you can make the oat base ahead and store it in the fridge. Reheat in the morning and add fresh toppings.
- This works great with any nut butter. Almond butter, cashew butter, or sunflower seed butter are all delicious swaps.
- For extra protein, stir in a scoop of your favorite plant-based protein powder while the oats are cooking.

FAQ
Is oatmeal a good vegan breakfast? Oatmeal is one of the best vegan breakfasts you can make. It’s high in fiber, naturally filling, and acts as a blank canvas for whatever toppings you love. With the right additions like nut butter, seeds, and fruit, you can easily hit 15-20 grams of protein in a single bowl.
What are the best toppings for vegan oatmeal? Some favorites: fresh or frozen berries, sliced banana, nut butter (peanut, almond, or cashew), chia seeds, hemp seeds, flaxseed, granola, coconut flakes, cacao nibs, dark chocolate chips, and chopped nuts. Mix textures for the best bowls.
Can I make oatmeal with water instead of milk? Yes. I usually make mine with water and it turns out great, especially when you add mashed banana for creaminess. But plant-based milk (oat, almond, or coconut) makes it richer if you prefer that.
Is oatmeal good before a workout? Oatmeal is an excellent pre-workout meal. The complex carbohydrates provide steady energy without weighing you down. I like it before surfing or any morning workout because it fuels me without feeling too heavy.
